The DePersio Family would like to thank our Jewish customers with a small gesture during Passover week. We will supply Matzah Shmuroh in place of bread on request. Please also feel free to ask your waiter about flourless dishes on the menu. Cynthia has prepared several flourless desserts for an after dinner treat. Please call the restaurant for reservations.
For goyim (folks eating crusty loaves of bread this week), Shmurah matzah is the creme de la creme of matzah, because it's heavily guarded. Wondering what it tastes like? Think handmade cardboard as opposed to machine-made cardboard. Mangia!

Shmural matzah is from grain that is "guarded" from excess moisture so that the chance of any leavening is eliminated. That's the reason for matzah to begin with. Seems the Jews were in a hurry to outrun their enemies and had to remove their bread quickly and found it to have not risen. That's why matzah is symbolic and all flour prouducts are not eaten for the eight days. That's also why everyone's gastro system is a mess at this time. Kinda like eating cement that becomes a sidewalk in the gastrointestinal system. The gesture is very appreciated.
